Fall Potato Soup

Fall Potato Soup
When I was feeling under the weather...
I made this really good soup with just the little ingrediants I had:)

using the cheese grater thick cut side I grated two idaho potatoes into a pan
then I added 3 tblsps or capfuls of canola oil
using the cheese grater  on the fine side I grated half a sweet vadalia onion
saute these on low to medium heat
add a bunch of fresh finely chopped parsely
sea salt and fresh ground peppercorn to taste
garlic powder only because I was out of fresh about 2 tablespoons or to taste I like alot of garlic flavor
2 cups of Silk Soymilk orginal plain
Heat on Low dont let boil
Then I added some frozen already fully cooked grilled chicken pieces
and some frozen red peppers you can use different veggis you like I think spinach would be good or any you have on hand in this soup
Make sure chicken pieces are heated throughout then serve and Enjoy!
